Harissa Roasted Aubergine

An incredibly good way to do aubergine. You can have it in a sandwich like I did, or even serve it on a bed of whipped tahini too, presented as a beautiful sharing side dish.

Turn cooking mode on

Step 1

Cut the aubergine into thick evenly sized discs. Place them on a baking tray with a pinch of salt and drizzle of olive oil. Cook in the oven at 180C for 45 minutes, turning them over halfway through.
