Chickpea 'Tuna' Mayo

This tuna style filling is a huge staple for me. I usually make a big batch and enjoy it throughout the week, whether in a sandwich, stirred into pasta, or on a baked potato. You can also add nori sheets or other extras like dried wakame to boost the "fishy" flavour.

Method

Turn cooking mode on

Step 1

Place the drained and rinsed chickpeas in a large bowl. Mash with a fork or potato masher until mostly broken down, some rougher bits are nice to keep for texture. Tip: You can also blitz them in a blender or food processor if preferred.
