Ingredients: 2 handfuls Kale; 1 handful Cavolo nero; 1 head Lettuce; 1/2 Cucumber; 2 stalks Celery; 1 serving Quinoa; 1 block Smoked tofu; 1 cup Cashews; 1/2 Lemon; 1 Garlic clove; 3 tsp Capers; 2 tsp Caper brine; 2 tsp Dijon mustard; 2 tbsp Extra virgin olive oil; 1 cup Water; 1 pinch Black pepper; Salt

A protein packed salad that’s abundant in a variety of plants, a good amount of protein, and plenty of greens that will nourish your body from the inside out. Great for meal prepping in advance too.
