Preheat the oven to 220C. Slice the sweet potato into evenly sized fry shaped pieces. Toss with the coconut oil, cinnamon, and a pinch of sea salt until lightly coated.

The use of coconut oil and cinnamon here is to add depth to the naturally sweet flavour of the sweet potato. If you'd like a more "savoury" version, omit the cinnamon and replace the coconut oil with olive oil.
